Spiced Barley Khichadi (Vegetarian)

A light, stimulating version of the classic dish, using barley instead of rice for Kapha.

Ingredients: 1/2 cup pearl barley, 1/4 cup mung dal, 1 tbsp ghee, 1 tsp black mustard seeds, 1 tsp cumin seeds, 1 tbsp fresh ginger (minced), 1/4 tsp black pepper, 1/2 cup chopped kale, 1/2 cup diced radishes, 5 cups water, Salt to taste.

Method: Rinse barley and dal. Heat ghee, sauté mustard and cumin seeds until they pop. Add ginger and black pepper, sauté. Add barley, dal, and vegetables. Stir to coat. Add water and salt. Bring to a boil, then simmer covered for 45-50 mins until grains are soft.
