  • Ingredients: 2 chicken breasts (pounded thin), 2 tbsp lemon juice, 1 tbsp olive oil, 1 tbsp fresh ginger (grated), 2 cloves garlic (minced), 1/2 tsp dry mustard, Pinch of cayenne pepper (optional), Salt and pepper to taste.

  • Method: Whisk all marinade ingredients (lemon juice, oil, ginger, garlic, spices) together. Add chicken and marinate for 30 mins. Grill or pan-sear chicken for 4-5 mins per side until cooked through. Serve with a large side of steamed bitter greens.
