  • Ingredients: 1/2 cup basmati rice, 1/4 cup mung dal (split yellow), 1 tbsp ghee, 1 tsp cumin seeds, 1/2 tsp fennel seeds, 1/2 tsp grated fresh ginger, 1/4 tsp asafoetida (hing), 1/2 tsp turmeric, 1 cup chopped zucchini & sweet potato, 5 cups water, rock salt to taste.

  • Method: Rinse rice and dal. Heat ghee in a pot, sauté spices for 30 sec. Add vegetables and sauté 2 mins. Add rice, dal, turmeric, water, and salt. Bring to a boil, then simmer covered for 30-40 mins until soft. Serve warm with extra ghee.
