Cilantro-Lime Baked White Fish (Fish)

  • Notable: Very lean protein. Coconut oil provides medium-chain triglycerides (MCTs) for easy energy. Cilantro is a natural heavy-metal chelator.

White fish is light and cooling. Cilantro and lime are excellent Pitta-pacifiers.

Ingredients: 2 white fish fillets (e.g., cod, sole), 1/4 cup fresh cilantro (chopped), 2 tbsp coconut oil (melted), Zest and juice of 1/2 lime, 1/4 tsp turmeric, Pinch of rock salt.

Method: Preheat oven to 400°F (200°C). Place fish in a baking dish. Mix coconut oil, lime zest/juice, turmeric, and salt. Pour over fish. Bake for 10-12 mins until fish flakes easily. Garnish generously with fresh cilantro.
