. Quinoa Salad with Roasted Vegetables:

Ingredients:

- 1 cup quinoa

- 2 cups mixed roasted vegetables (such as bell peppers, zucchini, and cherry tomatoes)

- 1/4 cup chopped fresh herbs (such as parsley or cilantro)

- 1/4 cup crumbled feta cheese (optional)

- 2 tablespoons extra-virgin olive oil

- 2 tablespoons lemon juice

- Salt and pepper to taste

Instructions:

1. Cook quinoa according to package instructions and let it cool.

2. In a large bowl, combine the cooked quinoa, roasted vegetables, chopped herbs, and feta cheese (if using).

3. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.

4. Pour the dressing over the salad and toss gently to combine.

5. Serve chilled or at room temperature as a nutritious and colorful salad option.
