Ingredients:

- 1 small head cauliflower, grated or pulsed in a food processor to resemble rice

- 1 cup mixed vegetables (such as peas, carrots, broccoli, and bell peppers)

- 1/2 cup diced tofu or chickpeas (for added protein)

- 2 tablespoons tamari or soy sauce

- 1 tablespoon sesame oil

- 1 tablespoon olive oil

- 2 cloves garlic, minced

- 1 teaspoon grated ginger

- Optional toppings: sliced green onions, sesame seeds

Instructions:

1. In a large skillet or wok, heat the sesame oil and olive oil over medium heat.

2. Add the minced garlic and grated ginger and sauté for a minute until fragrant.

3. Add the mixed vegetables and diced tofu or chickpeas to the skillet and stir-fry for 3-4 minutes until vegetables are tender-crisp.
