Cashew Cream Cheese - serves 4

"You can satisfy even the vegan with this fantastic dairy free alternative to cheese, however even for the cheese lovers, you can aim to please. A fail proof recipe".

Ingredients

  • 1 cup cashews soaked overnight

  • ⅓ cup nutritional yeast

  • ¼ tsp sea salt

  • ⅛ tsp cayenne pepper

  • 1 tbsp lemon juice

  • ⅓ cup filtered alkaline water (or regular water)

Other

  • 1 bunch red grapes

  • 1 handful walnuts, toasted

  • 1 handful, almonds, toasted and slivered

  • a selection of cheeses (parmesan, gouda)

  • ½ a loaf baguette bread, sliced thinly and toasted

  • 1 jar olive paste (for garnish)

In a blender, blend together the water, cashews, nutritional yeast, lemon juice, cayenne and salt. make sure the texture turns out creamy. You can do this by using a Vitamix or Blendtec. Adjust seasoning. Toast the bread and spread the mixture on top, than top off with olive tepenada.

Arrange grapes, cheeses and nuts onto a platter and serve with a port. Enjoy.
