Pitta-Soothing Coconut Quinoa

Protein: 10g/serving
Ayurvedic Benefits:

  • Coconut cools inflammation

  • Quinoa = complete protein (rare in plants!)

Ingredients:

  • 1 cup quinoa (soaked)

  • 1 cup coconut milk

  • 1 tsp fennel

  • ½ cup diced cucumber

Method:
Cook quinoa in coconut milk + fennel. Top with cucumber + mint.

Serve With:

  • Kapha: Add black pepper + pumpkin seeds.

  • Meal Prep: Stores 4 days!
