Pitta-Soothing Coconut Quinoa
Protein: 10g/serving

Coconut cools inflammation
Quinoa = complete protein (rare in plants!)
Ingredients:
1 cup quinoa (soaked)
1 cup coconut milk
1 tsp fennel
½ cup diced cucumber
Method:
Cook quinoa in coconut milk + fennel. Top with cucumber + mint.
Serve With:
