Chicken & Mung Bean Stew (Vata-Pitta Balancing)

Ayurvedic Benefits:

  • Mung beans + chicken = easy protein digestion

  • Cumin + coriander reduce bloating

Ingredients:

  • 1 cup cooked mung beans

  • 2 chicken thighs (bone-in)

  • 1 tsp cumin, coriander, turmeric

  • 1 cup spinach

  • 4 cups homemade broth

Method:

  1. Sauté chicken with spices until golden.

  2. Add broth + mung beans, simmer 25 mins.

  3. Stir in spinach before serving.

Modern Twist: Swap chicken for tofu (vegan protein!).
