Golden Mung Dal Khichdi (Vata-Pitta-Kapha Balancing)

Protein: 18g/serving (1 cup cooked)
Ayurvedic Benefits:

  • Easy to digest (ideal for detox/weak digestion)

  • Turmeric boosts immunity

  • Ghee fuels brain + lubricates joints

Ingredients:

  • ½ cup split mung dal (soaked 2 hrs)

  • ¼ cup basmati rice

  • 1 tsp turmeric, ½ tsp cumin

  • 1 tbsp ghee

  • 4 cups water

Method:

  1. Sauté spices in ghee until fragrant.

  2. Add drained dal + rice, toast 2 mins.

  3. Simmer with water 25 mins. Serve with cilantro.

Dosha Tip:

  • Vata: Top with extra ghee + avocado.

  • Pitta: Add coconut milk + omit garlic.

  • Kapha: Double cumin + add kale.
