Golden Mung Dal Khichdi (Vata-Pitta-Kapha Balancing)

Ingredients:
½ cup split mung dal (soaked 2 hrs)
¼ cup basmati rice
1 tsp turmeric, ½ tsp cumin
1 tbsp ghee
4 cups water
Method:
Sauté spices in ghee until fragrant.
Add drained dal + rice, toast 2 mins.
Simmer with water 25 mins. Serve with cilantro.
Dosha Tip:
Vata: Top with extra ghee + avocado.
Pitta: Add coconut milk + omit garlic.
Kapha: Double cumin + add kale.
