Ingredients
- 4 large avocados 
- 1 teaspoon sea salt (or to taste) 
- 1/4 cup raw apple cider vinegar 
- 4 large free-range chicken or duck eggs 
- 1 tablespoon ghee (for cooking) 
- Freshly ground black pepper (to taste) 
- Fresh herbs (such as cilantro or parsley) for garnish 
- Optional: Crumbled feta cheese (for serving) 
Instructions
- Prepare the Avocados: - Halve the avocados and discard the seeds. Scoop out a small amount of avocado from the center to make room for the poached egg. Carefully peel off the skin and set aside. 
 
- Poach the Eggs: - Fill a saucepan with 3 to 4 inches of water. Add 1/2 teaspoon of sea salt and the apple cider vinegar, then bring to a boil. 
- Poach the eggs for about 5 minutes, or until the whites are set but the yolks remain runny. 
 
- Fill the Avocado: - Carefully place one poached egg into each avocado half. Season with additional salt and freshly ground black pepper to taste. 
 
- Sear the Avocado: - In a skillet, heat the ghee over medium-high heat. Place the avocado halves, egg side up, into the skillet and lightly sear the bottom for a minute or two until golden. 
- Alternatively, you can place the filled avocados under a broiler for a few minutes to warm them through while keeping the eggs intact. 
 
- Serve: - Garnish with fresh herbs and serve immediately. Optionally, add crumbled feta cheese on top for extra flavor.
